Ginger & Lime Smoothie

If you haven’t noticed already, I’m a HUGE smoothie fan. I drink at least one every single day. It’s usually my go-to-breakfast but on stinking hot days, I will sometimes opt for another one at lunch, when it’s simply-too-hot-to-eat. Not only are smoothies incredibly easy to make but they are a powerhouse of nutrition. They really are the perfect meal and if you’re adding plenty of greens, even better! I’ve written about the benefits of green smoothies here.

As for this super green smoothie, it’s the perfect summer refresher. While the lime, ginger and mint taste amazing in combination, the ingredient I am really impressed with here is the zucchini. YES, the zucchini! While very mild in taste, the zucchini adds a really smooth and creamy consistency (unlike its watery green friend, the cucumber). The zucchini seems to add substance. This smoothie really hits the spot.

Here is my rough guide to making this delicious ginger and lime smoothie.  You can tailor it to your taste buds.

  • 1/2 mango
  • 1/2 to 1 lime, peeled
  • 1-inch fresh ginger
  • 1/2 zucchini
  • handful mint
  • large handful baby spinach
  • Ice & water to desired consistency

  1. Place all ingredients into a high-speed blender and whiz until smooth and creamy.  Enjoy!!
