I love functional food. Food that not only tastes delicious but also deeply heals and nourishes the body. This chocolate mousse is one of them. Every ingredient has life-giving properties. Cacao is a super antioxidant, coconut cream is a nourishing source of fat, organic gelatin is gut-loving and raw honey is a clean and natural energy source. Put them together and you have an amazing guilt-free mousse.
I am personally incorporating a lot of gelatin into my diet at the moment for it’s healing benefits of the gut. In this day and age, everyone needs to be working on their gut health!

Benefits Of Gelatin
Heals the gut lining
Consuming gelatin restores the mucosal lining of the digestive tract aka ‘the gut’. A compromised gut has been said to be the root of all disease. Gelatin also enhances hydrochloric acid production which is needed for nutrient absorption and proper digestion.
Improved skin health
Due to its rich source of collagen, gelatin can help improve the quality and appearance of your skin. It has been known to have positive effects on wrinkles, sun damage, stretch marks, cellulite and overall complexion. Consuming gelatin also supports hair and nail growth.
Protects bones and joints + builds muscle
As collagen is the body’s basic building block, it makes sense to consume foods like gelatin which are rich in collagen for naturally healthy skin, bones, tendons, ligaments and muscle tissues. Consuming gelatin has the ability to reduce inflammation, decrease joint stiffness and repair small tears in the cartilage.
Natural mood booster + sleep enhancer
The amino acid glycine found in gelatin act similarly to an anti-anxiety, anti-depressant and a natural sleep aid. Now that’s pretty awesome!
When buying gelatin, I am not talking about the cheap commercial brands you buy at the supermarket. You want a quality organic or pasture-raised brand. I personally use Changing Habits gelatin powder which is 100% organic and free of hormones, antibiotics or chemicals potentially found in other brands.
Here are a few of my favourite recipes that use gelatin
And now for my chocolate mousse recipe:
- 1 can full-fat coconut cream
- 1 cup filtered water
- 20g / 1tbsp organic gelatin
- 1/4 c cacao powder
- 1/4 cup raw honey
- Place coconut cream and water in a small saucepan
- Sprinkle gelatin over coconut cream and water and set aside to ‘bloom’ and thicken (this will only take a few minutes).
- Add cacao and honey
- Gently heat the mixture over a low heat until gelatin has melted and whisk until fully combined
- Pour mixture into small moulds or ramekins and allow to set in the fridge
- Top with your favourite seasonal fruit and enjoy!!
