These delicious festive rum balls are the perfect Christmas treat. Unlike traditional rum balls, these little morsels are refined sugar, dairy and grain free, making them a great alternative. They taste just as awesome and are super easy and simple to whiz up.
Packed with nutrition these healthy rum balls are sure to be a hit this Christmas. Pimped with goji berries and pistachios they’ll make a colourful addition to the Christmas table or a fun little gift for that someone special.
Makes approx. 12
- 1 tbsp pepitas
- 1 tbsp pistachios
- 2 tbsp goji berries
- 1 cup raw cashews
- 1/2 cup coconut sugar
- 1 cup shredded coconut
- 1/4 cup cacao powder
- 1/8 cup rum or to taste
- Place pepitas and pistachios in a food processor and blitz until fine. Remove and put aside
- Place goji berries in the food processor and blitz until a fine crumb. Remove and put aside
- Place cashews, coconut sugar, shredded coconut, cacao powder and rum in the food processor and blend until a thick doughy mixture is formed
- Roll into small balls with your hands and coat in the blended pistachio and goji mix
